This is something I threw together after going to the farmer’s market. It might sound strange with the orange balsamic vinaigrette but it is very delicious.
2 1bs. Green beans trimmed
1 tomato diced
½ red onion sliced thin wedges
2/3 cup kalamata olives
1 ear corn cooked and cut, or 1 cup frozen corn
1 t. salt
½ t. black pepper
Orange balsamic vinaigrette
2 T. balsamic vinaigrette
1 & ½ oranges squeezed
½ cup water
1 /2 t. honey
1 t. salt
Cracked pepper
Boil water in a large stock pot. Toss green beans in boiling water for about 8 minutes. Remove and put in ice water bath to stop the cooking. Drain beans after a few minutes and toss with remaining ingredients. Pour vinaigrette on salad and serve.
