This dish can be served as a wonderful side dish with any meal or simply for a nice light lunch. It would also be great to serve with a Christmas morning brunch.
1 pomegranate, seeded
1 ½ cups brown rice
2 honeybells, peeled and chopped
½ cup dried cranberries
½ cup pistachios
3 T. pomegranate syrup
1 T. honey
1 t. Dijon mustard
Salt & Pepper to taste
Prepare brown rice in rice cooker.
While the rice is cooking prep the other ingredients.
Add the cooked rice, pomegranate seeds, honeybells, dried cranberries and pistachios in a salad serving dish and mix together.
In a small measuring cup whisk the pomegranate syrup, honey and Dijon mustard together. Pour over the salad and then season with salt and pepper.
