My brother in-law David fixed these burritos for us while we were visiting in Florida. They were super good and easy to make. We really enjoyed them!
½ each red, yellow and orange peppers, diced
1 small sweet onion
1 can Nib lets corn, drained
1 can black beans
1 can dark red kidney beans
1 can garbanzo beans
1 can chili beans
1 can Ro*Tel mild tomatoes
1 avocado, sliced thinly
2 cups red cabbage, sliced thinly
1 package taco seasoning
1 cup salsa
1 package fat free whole wheat tortillas
Sauté the peppers and onion with ½ cup of water in a large skillet. Cook for approximately 4 to 5 minutes on medium high until veggies are softened.
Add corn, beans, Ro*Tel tomatoes, salsa and taco seasoning. Heat the mixture thoroughly for about 10 minutes. Do not smash the beans.
Take 2 paper towels and make them slightly damp and wrap tortillas in the towels. Heat the tortillas in the microwave for 30 seconds.
Fill the tortillas with beans, red cabbage and avocado slices. Season the burritos with hot sauce and jalapenos if desired. Fold the tortillas over and enjoy.
