I noticed a beautiful new shipment in the store today of heirloom tomatoes. I threw this salad together in no time. The sweetness of the honey with the Champagne vinegar was fantastic.
1 ½ - 2 lbs of assorted heirloom tomatoes
1 red tomato
2 T. red onion, thinly sliced
1 small handful fresh parsley, chopped
½ t. dried basil
1 ½ T. Champagne vinegar
1 ½ T. honey
Pinch of salt
¼ t. ground pepper
Slice all of the tomatoes in thin wedges. Place the tomatoes in a small glass bowl.
Add the red onion, parsley, basil, Champagne vinegar, honey, salt and the pepper. Mix well and
cover.
Refrigerate the salad for 1 hour and serve.
