I love using flavored vinegar to dress kale. If you can’t find vanilla balsamic vinegar, mix a teaspoon of pure vanilla extract with balsamic vinegar.
1 bunch of kale, stripped and cut in bite size pieces
4 cups arugula
2/3 cups dried cherries
½ cups toasted walnuts
Vanilla balsamic vinegar
Place the kale in a skillet with about 2 cups water on medium high setting. Keep stirring until the kale becomes bright green and slightly wilted. Remove from skillet and drain in salad spinner. Place in a large salad bowl.
Add the arugula to salad bowl with
kale.
Place cherries in a small bowl and cover with boiling water. Let plump for about 2 – 3 minutes then drain water. Drain water and then add cherries along with toasted walnuts to salad bowl.
Drizzle vanilla balsamic vinegar on top of salad and coat well.
