The girls wanted to make something they could throw in their lunchboxes. We ended up deciding on making burritos. You can basically use anything in your pantry and refrigerator. The girls had fun assembling their own burrito.
Whole wheat tortillas
Black bean hummus
Sliced black olives
Baby carrots
Sundried tomatoes
Sunflower Seeds
Baby lettuce leaves
Place a whole wheat tortilla on a plate.
Spread the hummus on the entire bottom of the
tortilla.
Top with black olives, sundried tomatoes, sunflower seeds, carrots and lettuce.
Roll the tortilla up and press the ends together where the hummus and tortilla
meet.
Serve with assorted fresh fruits.
