These are one of the best cookies I have had in a very long time. There isn’t a lot of sugar in these cookies but with the chocolate chips and sweetness from the fruit, they are plenty sweet. They remind me of the monster cookies I use to make without M & M’s
2 ripe bananas, mashed
4 oz. unsweetened applesauce
3 cups old fashioned oatmeal
2 T. ground flaxseeds
1 cup whole wheat flour
1 t. baking powder
1 cup Parker’s all natural peanut butter
1 T. pure vanilla
3 T. brown sugar
½ cup peanuts
2/3 cup dried cherries
½ cup Enjoy Life dairy free chocolate chips
Pinch of salt
Preheat oven to 350 degrees
Using a large bowl, mix the bananas and applesauce together. Add the peanut butter, brown sugar and the vanilla in with the fruit and mix well.
Place the dry ingredients; oatmeal, ground flaxseeds, baking powder, whole wheat flour, peanuts, chocolate chips and salt in with the peanut butter mixture. Stir until everything is well blended.
Line 2 cookie sheets with parchment paper. Place rounded tablespoon size batter on cookie sheets. Bake for 15 – 17 minutes until golden brown.
