Mushroom, Squash Cranberry Couscous Salad

If you don’t want to spend a lot of time fixing a delicious filling salad, make this dish.  It helps that the mushrooms and the squash were already cut.  I found the squash at the Walmart produce area.  It was terrific.

Ingredients

1 box Near East Wild Mushroom & Herbs Couscous
1 pkg. of diced squash
1 pkg. sliced mushrooms
1 red onion thinly sliced
½ cup dried cherries or cranberries
¼ t. thyme
½ t. onion powder
½ t. garlic salt
½ t. salt
Fresh cracked multi pepper seasoning
1 pkg. mixed lettuce greens

Instructions

Prepare couscous in microwave according to package, omit the oil.

In a large skillet place onion, mushrooms, dried fruit and squash with about 2/3 cup of water.  Cook all ingredients until tender.  Add seasonings and mix well. 

On a serving plate, place mixed salad greens, then spoon some couscous on top of the greens then place mixed veggies and fruit on the top.
