This is incredibly light and delicious. Very simple to make and works well with veggies or baked tortilla chips.
2 cans cannellini beans drained and rinsed
1 clove garlic
4 – 6 T. fresh lemon
1 t. oregano
½ t. salt
1 small handful of fresh parsley
In food processor mix all ingredients until smooth. Taste and adjust seasonings. If mixture is too dry, add 1 or 2 T. of water. Refrigerate and serve with fresh cut veggies.
